KFC Franchisee Recycles Used Cooking Oil

An Iowa KFC franchisee is recycling its restaurant fryer oil through a system developed by Restaurant Technologies Inc. (RTI).
The closed-loop system includes two tanks – one for fresh oil, and a second for waste oil – and a secure fill box mounted to the restaurant’s exterior. RTI removes waste grease and delivers fresh oil to the restaurant. RIT uses the waste oil to make biodiesel and animal feedstock, according to an Environmental Leader report.
Kevin Schlutz, President of Central Iowa KFC, said the system completely automates his oil management, a duty that is imperative to his operation. The system allows Schultz to remotely check and manage his oil in and out. “Employees no longer need to waste time ordering shortening or scrambling when not enough is in stock. Real-time reporting notifies central managers before they even know it,” he said.
The system also enhances worker safety, eliminating the need for employees to pour oil from jugs into fryers, as was done in the past. They stores also were able to eliminate “grease shuttles” for used oil disposal, which removes a kitchen safety hazard, according to RTI. The new system also eliminates the use of oil jugs and boxes in the store, which means the restaurants don’t have to worry about storage and recycling.
